Recipe: Brown Rice Chilla

Ingredients:

  • 1 cup Brown Rice Chilla Mix

  • ½ cup water (adjust to get a pancake-batter consistency)

  • 1 small onion, finely chopped

  • 1 green chili, chopped (optional, per taste)

  • Fresh coriander, chopped

  • Optional: grated vegetable (carrot, zucchini, capsicum)

  • Salt & pepper to taste (if mix isn’t already salted)

  • Oil or ghee for cooking

Instructions:

  1. In a mixing bowl, combine the Brown Rice Chilla Mix with water, mixing well until you get a smooth batter (not too thick, not too runny).

  2. Add onions, green chili, coriander, optional veggies, salt & pepper. Mix well.

  3. Heat a non-stick skillet (tawa) over medium heat. Lightly grease it.

  4. Pour a ladleful of batter onto the skillet, spread gently to form a pancake (~5-6 inches).

  5. Cook for 2-3 minutes until edges begin to lift, flip carefully, drizzle a little oil or ghee, cook the other side till golden brown spots appear.

  6. Repeat with the remaining batter.

Serving Suggestions:

  • Serve hot with green chutney, yogurt (curd), or tomato salsa.

  • Try with a side of mint chutney or spicy pickle.
